Southwest Skillet

Ingredients:
1 medium sweet potato, peeled & diced
1/4 cup water
1 can black beans, drained
1 can corn, drained
2 cups cooked rice
1 fajita spice packet
Juice of 1 lime
Shredded cheese, if desired
Directions:
Cook rice according to package directions. Set aside.
Add sweet potato to skillet with olive oil or butter. Sauté over medium heat for 8 minutes.
Add 1/4 cup water to skillet and cover with lid. Steam potatoes until tender, about 4 minutes.
Add black beans, corn, rice, spice mix, and lime juice to skillet. Stir well until combined.
Top with cheese and salsa if desired.
