Southwest Skillet

Ingredients:

  • 1 medium sweet potato, peeled & diced

  • 1/4 cup water

  • 1 can black beans, drained

  • 1 can corn, drained

  • 2 cups cooked rice

  • 1 fajita spice packet

  • Juice of 1 lime

  • Shredded cheese, if desired

Directions:

  1. Cook rice according to package directions. Set aside.

  2. Add sweet potato to skillet with olive oil or butter. Sauté over medium heat for 8 minutes.

  3. Add 1/4 cup water to skillet and cover with lid. Steam potatoes until tender, about 4 minutes.

  4. Add black beans, corn, rice, spice mix, and lime juice to skillet. Stir well until combined.

  5. Top with cheese and salsa if desired.

  6. Enjoy warm!
